How to Make Indonesian Traditional Cake: Pandan Klepon

Pandan Klepon is a very popular traditional Indonesian snack. It is characterized by its striking green color and chewy skin. The green color comes from natural pandan leaf coloring, which gives it a distinctive fragrant aroma. The filling of klepon is usually liquid palm sugar that melts in your mouth when you bite into it.

Ingredients:

  • 250gr glutinous rice flour
  • 50gr rice flour
  • 1 tea spoon salt
  • 3 drops of green food coloring
  • Approximately 250ml of Pandan Juice + 2 drops of green food coloring
  • 2 slices of plam sugar (thinly sliced)
  • Desiccated coconut to taste

How to make step by step:

1. Combine the dry ingredients and mix well, then slowly pour in the Pandan Juice until the mixture can be formed into a dough (without any remaining liquid).

2. Prepare the filling by slicing the palm sugar and shaping it into approximately 17 balls.

3. Take one portion of the dough, flatten it, and add the filling. Roll it into a ball. Repeat until all the dough is used up.

4. Boil enough water, add the Klepon, and cook until they float. Wait for approximately 5 minutes to ensure they are fully cooked. Then drain it.

5. Roll in dried coconut flakes (freshly grated coconut is better) and serve.

6. The cake is ready to eat!
