This coconut ice cream brings the Caribbean vibe straight to your home. It’s made with coconut cream, desiccated coconut, cream, brown sugar, vanilla, and a touch of coconut rum, basically like a frozen cocktail you’d enjoy by the pool at a fancy resort, only better because you get to eat it out of a scoop instead of a coconut. Want it vegan? just swat the cream for a plant-based one, though the texture might be a little less creamy.

Ingredients:
- 1 can of cold coconut cream, water drained
- 400 ml cold heavy whipping cream or plant-based alternative
- 1/4 cup brown sugar
- 1/2 cup white sugar
- 1 dash of salt
- 1 tsp vanilla extract
- 2-3 tbl coconut rum
- 4 tbl desiccated coconut
Instruction
- Mix all the ingredients except for the coconut rum and desiccated coconut until smooth and the sugar has fully dissolved.

- Add the mixture to your ice cream machine and chum until it has visibly grown in volume by about 1/3. When it is almost done churning add the coconut rum and desiccated coconut, keep churning until it has fully incorporated.

- Transfer the ice cream into a freezer-friendly container and chill for at least 8 hours or overnight.
